Ingredients
  • 1.5 cup Farro
  • 2 medium Beets
  • 0.5 cup Fresh Herbs (such as parsley, mint, and dill)
  • 1 small Red Onion
  • 0.5 cup Crumbled Feta Cheese
  • 0.25 cup Toasted Walnuts
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
Instructions
  1. Cook farro according to package instructions.
  2. Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and bake for 40-50 minutes until tender. Let cool, then peel and dice.
  3. In a large bowl, combine cooked farro, diced beets, fresh herbs, diced red onion, crumbled feta cheese, and toasted walnuts.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper. Pour over the salad and toss to combine.
  5. Let the salad rest for 10 minutes for the flavors to meld. Serve chilled.
