Fabulous Marbled Cheesecake

Preheat the oven to 180°C (350°F).

Crush the digestive biscuits into fine crumbs and mix with melted butter.

Press the biscuit mixture into the bottom of a greased springform pan to form the crust.

In a large bowl, beat the cream cheese and sugar until smooth.

Add the sour cream, eggs, and vanilla extract. Mix well.

Pour half of the cream cheese mixture over the crust.

Add cocoa powder to the remaining cream cheese mixture and mix until well combined.

Pour the cocoa mixture over the plain cream cheese mixture in the pan.

Use a knife to create a marbled effect by swirling the two mixtures together.

Bake in the preheated oven for 50-60 minutes or until the center is set.

Turn off the oven and leave the cheesecake inside for 1-2 hours to cool gradually.

Remove from the oven and refrigerate for at least 2 hours or overnight.
