Espresso Shortbread
Shortbread originated in Scotland and has been enjoyed for centuries. It is traditionally made with just three ingredients: butter, sugar, and flour.

Preheat the oven to 325°F (163°C). In a mixing bowl, cream together the butter and sugar until light and fluffy.

In a separate bowl, whisk together the flour, espresso powder, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Press the dough into an 8-inch (20 cm) square baking pan, smoothing the top with a spatula.

Bake for 20-25 minutes, or until the edges are golden brown.

Remove from the oven and let it cool in the pan for 10 minutes.

Using a sharp knife, cut the shortbread into squares while it is still warm.

Allow the shortbread to cool completely in the pan before serving.
