  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round baking dish.
  2. In a food processor, crush the cinnamon graham crackers until fine crumbs form. In a medium bowl, combine the crumbs and melted butter. Press the mixture into the bottom of the prepared baking dish to create the crust.
  3. In a saucepan, heat the eggnog over medium heat until steaming. Remove from heat and whisk in the sweetened condensed milk, vanilla extract, and ground nutmeg until well combined.
  4. In a separate bowl, whisk the eggs and granulated sugar until light and fluffy. Slowly pour the eggnog mixture into the egg mixture, whisking constantly.
  5. Pour the custard mixture over the crust in the baking dish. Place the dish in a larger baking pan and add enough water to the larger pan to reach halfway up the sides of the dish.
  6. Bake for 40-45 minutes, or until the flan is set but still slightly jiggly in the center. Remove from the oven and let cool for 10 minutes.
  7. Transfer the flan to the refrigerator and let it rest for at least 2 hours, or overnight.
  8. Before serving, sprinkle the top of the flan with a mixture of ground nutmeg and granulated sugar. Use a kitchen torch to caramelize the sugar until golden and bubbly.
