Preheat the oven to 375°F (190°C).

Peel and thinly slice the potatoes.

In a saucepan, heat the heavy cream, Dijon mustard, minced garlic, salt, black pepper, and fresh thyme over medium heat until it simmers.

Grease a baking dish with butter.

Arrange a layer of sliced potatoes in the dish, then pour a portion of the cream mixture over the potatoes. Repeat the layers until all the potatoes and cream mixture are used.

Sprinkle grated cheddar cheese on top.

Cover the dish with foil and bake for 45 minutes.

Remove the foil and bake for an additional 15 minutes until the potatoes are tender and the top is golden brown.
