Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. Add the cold cubed butter to the bowl and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. In a separate bowl, mix together the cottage cheese, egg, and vanilla extract.
  4. Add the cottage cheese mixture to the flour mixture and stir until a dough forms.
  5. Divide the dough into 2 equal portions and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. On a lightly floured surface, roll out one disk of dough into a circle. Cut the circle into 6 wedges.
  8. Starting from the wider end, roll up each wedge tightly to form a crescent shape. Place the butterhorns on the prepared baking sheet.
  9. Repeat with the remaining dough.
  10. Bake for 15-18 minutes or until golden brown.
  11. Allow the butterhorns to cool on a wire rack. Dust with powdered sugar before serving.
