Roll each portion into a log shape and wrap in plastic wrap.

Chill the dough logs in the refrigerator for at least 1 hour.

Remove the dough logs from the refrigerator and slice into 1/2 inch thick rounds.

Insert a lollipop stick into each cookie round and place on the prepared baking sheet.
