  1. In a large bowl, cream together the butter and granulated sugar.
  2. Beat in the egg and vanilla extract.
  3. In a separate bowl, combine the all-purpose flour, baking powder, ground cinnamon, ground ginger, ground nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out the dough to 1/4 inch thickness. Use cookie cutters to cut out desired shapes.
