In a mixing bowl, combine cream cheese, graham cracker crumbs, powdered sugar, and vanilla extract. Mix well until smooth.

Roll the mixture into small balls or shape them into pops using a lollipop stick.

Place the cheesecake pops or balls on a baking sheet lined with parchment paper.

Refrigerate for at least 2 hours to firm up.

In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between, until smooth.

Dip each cheesecake pop or ball into the melted white chocolate, allowing any excess to drip off.

Sprinkle with your choice of sprinkles or crushed nuts.

Place the coated pops or balls back onto the parchment-lined baking sheet.

Refrigerate for another 30 minutes to allow the chocolate to set.
