  1. Melt the dark chocolate and set aside.
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and mix well.
  4. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  6. Stir in the melted dark chocolate and mint extract.
  7. Cover the dough and refrigerate for 30 minutes.
  8. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  9. Roll the dough into small balls and place them on the prepared baking sheet.
  10. Flatten each ball with the bottom of a glass.
  11. Bake for 10 minutes, then remove from the oven and let cool on the baking sheet for 5 minutes.

  14. Spread the mint filling onto the bottom of half of the cookies.
