Dark Chocolate Cake with Malbec-Quince Filling and Chocolate Buttercream

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a microwave-safe bowl, melt the dark chocolate and butter together. Stir until smooth.

In a separate bowl, whisk together the sugar and eggs until well combined.

Gradually add the melted chocolate mixture to the sugar and eggs, mixing well.

In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients to the chocolate mixture, mixing until just combined.

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

While the cakes are baking, prepare the Malbec-quince filling. In a saucepan, combine the Malbec wine, quince, and water. Simmer until the quince is tender.

Remove the quince from the liquid and dice it into small pieces.

In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Once the cakes have cooled, spread a layer of the Malbec-quince filling on top of one cake layer.
