  5. Add the spice mixture to the pot and cook for 1 minute, stirring constantly.
  6. Pour in coconut milk and stir well.
  7. Add chopped tomatoes, peeled and diced potatoes, sliced carrots, diced bell peppers, and drained chickpeas.
  8. Bring the curry to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the vegetables are tender.
  9. Stir in fresh cilantro and lemon juice.
  10. Let the curry rest for 10 minutes before serving.
  11. Serve hot with rice or naan bread.
