Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg, heavy cream, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the dried cranberries and orange zest.
  6. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a 1-inch thick circle.
  7. Use a sharp knife or a biscuit cutter to cut the dough into 8 wedges or rounds.
  8. Place the scones onto the prepared baking sheet and brush the tops with a little extra cream.
  9. Bake for 12-15 minutes, or until the scones are golden brown.
  10. Remove from the oven and let them cool on a wire rack for 10 minutes before serving.
