  1. In a small bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of four 8-ounce jars.
  2. In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth.
  3. Add eggs one at a time, beating well after each addition. Stir in sour cream and lemon juice.
  4. Pour the cream cheese mixture into the jars, filling each about three-quarters full.
  5. Place the lids on the jars and place them in the crock pot.
  6. Pour water into the crock pot until it reaches about halfway up the sides of the jars.
  7. Cover the crock pot and cook on low heat for 2 hours.
  8. After 2 hours, turn off the crock pot and leave the jars inside for an additional 3 hours.
  9. Remove the jars from the crock pot and let them cool completely.
  10. Once cooled, refrigerate for at least 1 hour before serving.
  11. Serve topped with fresh berries.
