Melon bread, also known as melon pan, is a popular Japanese sweet bread with a crispy cookie-like crust. Despite its name, it doesn’t actually contain melon flavoring but gets its name from the melon-like appearance of the crust.

  1. In a large mixing bowl, combine flour, sugar, salt, and instant yeast. Mix well.
  2. Add melted butter, milk, melon extract, and beaten egg to the dry ingredients. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean cloth, and let it rest for 10 minutes.
  5. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  6. Divide the dough into 4 equal portions. Roll each portion into a long rope shape.
  7. Place the ropes on the prepared baking sheet, leaving some space between them.
  8. Brush the ropes with beaten egg and sprinkle white sesame seeds on top.
  9. Bake in the preheated oven for 15 minutes or until golden brown.
  10. Remove from the oven and let the bread sticks cool on a wire rack.
  11. Serve the crispy melon bread sticks and enjoy!
