  2. Peel and thinly slice the potatoes.

  4. Gradually whisk in the milk and heavy cream. Cook until the mixture thickens, stirring constantly.
  5. Remove the saucepan from heat and stir in the cheddar cheese until melted. Season with salt, black pepper, and garlic powder.
  6. In a greased baking dish, layer half of the sliced potatoes. Pour half of the cheese sauce over the potatoes. Repeat the layers with the remaining potatoes and cheese sauce.
  7. Sprinkle fresh thyme leaves on top.
  8. Cover the baking dish with foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
