Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, and cook until onions are translucent.

Add sliced mushrooms and cook until they release their moisture and start to brown.

Add barley, lima beans, vegetable stock, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes or until barley and lima beans are tender.

Stir in cream and cook for an additional 5 minutes.
