Creamy Carrot Couscous
Couscous is a staple food in many North African and Middle Eastern countries and is traditionally made from semolina, which is the coarse, purified wheat middling of durum wheat.

Peel and cut the carrots into small cubes.

Heat butter in a large saucepan and sauté chopped onion and minced garlic until translucent.

Add carrots, cumin, coriander, salt, and black pepper to the saucepan, and cook for 5 minutes.

Add vegetable broth and bring it to a boil.

Stir in couscous, cover the saucepan, and let it simmer for 10 minutes or until the couscous is tender.

Remove from heat and let it rest for 5 minutes.

Fluff the couscous with a fork and add lemon juice, parsley, and heavy cream.

Mix well and serve hot.
