  2. Break the matzo sheets into small pieces and place half of them into the greased baking dish.
  3. Slice the ripe bananas and peaches into thin slices.
  4. Layer half of the banana and peach slices on top of the matzo pieces.
  5. Cut the brie cheese into small chunks and distribute half of it over the fruit layer.
  6. In a medium bowl, whisk together the eggs, heavy cream, sugar, vanilla extract, cinnamon, and salt.
  7. Pour half of the egg mixture over the fruit and cheese layer.
  8. Repeat steps 2-7 with the remaining matzo pieces, fruit slices, brie cheese, and egg mixture.
  9. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the center is set.
  10. Let the bake rest for 10 minutes before serving.
