Cream Wafers

In a bowl, cream together the butter and powdered sugar until light and fluffy.

Gradually add in the flour and mix until well combined.

Divide the dough into two equal portions and shape each into a disc. Wrap in plastic wrap and refrigerate for 1 hour.

Preheat the oven to 375°F (190°C).

Roll out each portion of dough on a lightly floured surface to about 1/8-inch thickness.

Cut into desired shapes using cookie cutters.

Place the cut-out cookies onto a baking sheet lined with parchment paper.

Bake for 8-10 minutes, or until the edges are lightly golden.

Remove from the oven and let cool completely on a wire rack.

In a separate bowl, whip the whipping cream until stiff peaks form.

Stir in the vanilla extract.

Sandwich the cookies together with a dollop of whipped cream.
