Peel and chop the potatoes into small cubes. Clean and slice the leeks.

In a large pot, melt the butter over medium heat. Add the onions and leeks, and sauté until softened.

Add the potatoes and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the heavy cream. Season with salt and black pepper to taste.

Simmer for an additional 5 minutes to heat through.

Serve hot, garnished with fresh herbs if desired.
