Cookie pops on a stick are a fun twist on traditional cookies and make for a great party treat or gift idea!

Preheat the oven to 350°F (175°C).

In a large bowl, cream together the butter and sugar until smooth.

Beat in the egg and vanilla extract.

In a separate bowl, combine the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture and mix well.

Stir in the chocolate chips.

Roll the dough into small balls and place them on a baking sheet lined with parchment paper.

Insert a lollipop stick into each dough ball.

Bake for 10-12 minutes or until golden brown.

Allow the cookie pops to cool completely on a wire rack.

Once cooled, dip the tops of the cookie pops into melted chocolate and sprinkle with colorful sprinkles.
