  2. Place the cookies on a baking sheet and bake for 8-10 minutes or until golden brown.
  3. Remove the cookies from the oven and let them cool completely.
  4. Once the cookies have cooled, place a scoop of vanilla ice cream on the bottom side of one cookie.
  5. Take another cookie and gently press it on top of the ice cream to create a sandwich.
  6. Repeat with the remaining cookies and ice cream.
  7. Place the cookie ice cream sandwiches in the freezer for at least 30 minutes to firm up.
  8. Serve and enjoy!
