  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture and mix until a dough forms.
  6. Divide the dough into two equal portions. Add food coloring to one portion if desired.
  7. Roll out each portion of dough into a rectangle shape.
  8. Place the colored dough on top of the plain dough and roll them together into a log.
  9. Cut the log into 1-inch thick slices and place them on a baking sheet.
  10. Bake for 10-12 minutes or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  12. In a small bowl, whisk together the icing sugar and milk to make the icing.
  13. Drizzle the icing over the cooled cookies to create a castle design.
  14. Let the icing set for 30 minutes before serving.
