In a large saucepan, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Add the corn kernels and cook for another 5 minutes.

Stir in the coconut milk, salt, and black pepper. Bring to a simmer and cook for 10 minutes.

Remove from heat and let it rest for a few minutes.

Garnish with fresh cilantro and serve hot.
