  2. Mix well until the mixture is sticky and holds together.
  3. Roll the mixture into bite-sized balls and place them on a baking sheet lined with parchment paper.
  4. Place the coconut balls in the refrigerator for 30 minutes to firm up.
  5. Meanwhile, melt the dark chocolate and coconut oil in a heatproof bowl over a saucepan of simmering water.
  6. Once the chocolate is melted and smooth, remove from heat.
  7. Dip each coconut ball into the melted chocolate, using a fork to ensure it is fully coated.
  8. Place the coated truffles back on the parchment paper.
  9. Sprinkle cocoa powder over the truffles.
