In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the coconut milk and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

In a medium bowl, beat the mascarpone cheese and powdered sugar until smooth and creamy.

Place one cake layer on a serving plate. Spread half of the mascarpone frosting over the top. Place the second cake layer on top and spread the remaining frosting over the top and sides of the cake.
