In a large saucepan, melt the clotted cream, sugar, and golden syrup over low heat, stirring continuously.

Once melted, increase the heat to medium and bring the mixture to a boil. Stir constantly to prevent burning.

Continue boiling for 15-20 minutes, or until the mixture reaches the soft ball stage (115°C/240°F on a candy thermometer).

Remove from heat and let it cool for 5 minutes.

Stir in the vanilla extract and sea salt flakes.

Pour the mixture into a greased baking dish and let it rest at room temperature for 2 hours, or until set.

Cut into squares or desired shapes and serve.
