In a mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough into two equal portions and shape each portion into a disc. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Roll out the dough on a lightly floured surface to a thickness of about 1/4 inch. Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheet.

Bake for 8-10 minutes, or until the edges are lightly golden. Allow to cool completely on a wire rack.

In a small bowl, mix together the icing sugar and a few drops of food coloring until desired color is achieved. Decorate the cooled cookies with the icing and sprinkle with sprinkles.
