Chocolate-Raspberry Cheesecake

Preheat the oven to 325°F (163°C).

In a medium bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press the mixture onto the bottom of a 9-inch (23 cm) springform pan.

In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the melted chocolate.

Pour the cream cheese mixture over the crust in the springform pan.

Drop spoonfuls of raspberry preserves onto the cream cheese mixture. Swirl with a knife to create a marbled effect.

Bake for 60 minutes or until the center is set.

Turn off the oven and leave the cheesecake in the oven for 1 hour.

Remove the cheesecake from the oven and let it cool to room temperature.

Refrigerate for at least 2 hours or overnight.

Garnish with fresh raspberries before serving.
