  1. Preheat the oven to 325°F (160°C). Crush the chocolate cookies and mix with melted butter. Press the mixture into the bottom of a springform pan.
  2. In a mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. Melt the dark chocolate and fold it into the cream cheese mixture. Pour the mixture over the crust in the springform pan.
  4. Bake for 60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven for 2 hours.
  5. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
  6. Before serving, top the cheesecake with fresh raspberries and whipped cream.
