In a medium bowl, whisk together the flour, cocoa powder, and salt.

In a separate large bowl, cream together the butter, peanut butter, powdered sugar, and vanilla extract until light and fluffy.

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll out one disk of dough on a lightly floured surface to 1/4-inch (6mm) thickness.

Use a round cookie cutter to cut out cookies and place them on the prepared baking sheet.

Spread melted chocolate on the bottom side of half of the cookies.
