  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, and salt.
  3. In a large bowl, beat the butter and sugar until light and fluffy. Add the egg yolks, vanilla extract, peppermint extract, and green food coloring (if using). Beat until well combined.
  4. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  5. Roll the dough into 1-inch balls and place on the prepared baking sheet. Use your thumb to make an indentation in the center of each ball.
  6. Bake for 10-12 minutes, or until set. Remove from the oven and let cool on the baking sheet for 5 minutes.
  7. While the cookies are cooling, melt the chopped chocolate and heavy cream in a microwave-safe bowl, stirring every 30 seconds, until smooth.
  8. Spoon the melted chocolate into the indentations of the cookies. Sprinkle with crushed peppermint candies.
  9. Allow the chocolate to set for about 30 minutes before serving.
