Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter until well mixed. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, beating well after each addition.
  4. Melt the semi-sweet chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth. Add the melted chocolate and heavy cream to the cream cheese mixture and beat until well combined.
  5. Pour the batter over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 55-60 minutes or until the center is set and the top is lightly browned.
  7. Remove from the oven and let cool in the pan for 10 minutes. Then, run a knife around the edges of the pan to loosen the cheesecake.
  8. Refrigerate for at least 2 hours or overnight to allow the cheesecake to set.
  9. Before serving, remove the sides of the springform pan and transfer the cheesecake to a serving plate.
  10. Top the cheesecake with assorted fresh fruits. Serve chilled.
