  5. Roll the dough into a log shape and wrap it in plastic wrap. Chill in the refrigerator for 30 minutes.
  6. Slice the dough into 1/4-inch thick rounds and place on a baking sheet.
  7. Bake for 12-15 minutes or until the edges are golden brown.
  8. Allow the shortbread cookies to cool completely.
  9. Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  10. Dip each cookie halfway into the melted chocolate.
  11. Place the dipped cookies on a parchment-lined baking sheet and let the chocolate set.
