In a large saucepan, combine the granulated sugar, light corn syrup, and water. Cook over medium heat, stirring constantly, until the mixture reaches 300°F (150°C) on a candy thermometer.

Remove the saucepan from heat and quickly stir in the baking soda and vanilla extract. The mixture will foam up.

Pour the foamy mixture onto a greased baking sheet and let it cool for about 1 hour.

Once cooled, break the sponge candy into small pieces.

Melt the dark chocolate in a microwave or double boiler.

Dip each piece of sponge candy into the melted chocolate, coating it completely.

Place the chocolate-covered sponge candy on a parchment-lined baking sheet and let it set at room temperature until the chocolate hardens.
