  1. Preheat the oven to 350°F (175°C). Roll out the gingerbread cookie dough to a thickness of 1/4 inch. Use cookie cutters to cut out gingerbread kid shapes. Place them on a baking sheet lined with parchment paper.
  2. Bake the gingerbread kids for 10-12 minutes or until lightly golden. Remove from the oven and let them cool completely.
  3. Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth and melted.
  4. Dip each gingerbread kid into the melted dark chocolate, making sure to coat it completely. Place them back on the parchment paper.
  5. Melt the white chocolate in a separate microwave-safe bowl in 30-second intervals, stirring in between, until smooth and melted.
  6. Use a spoon or a piping bag to drizzle the melted white chocolate over the chocolate-covered gingerbread kids.
  7. Sprinkle some colorful sprinkles on top of the white chocolate.
  8. Let the chocolate set for about 1 hour, or until firm.
  9. Serve and enjoy!
