  1. Preheat the oven to 325°F (163°C). Crush the chocolate cookies in a food processor and mix with melted butter. Press the mixture into the bottom of a greased 9-inch (23 cm) springform pan.
  2. In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Gradually add flour and cocoa powder, mixing until just combined.
  3. Pour the cream cheese mixture over the cookie crust in the springform pan. Smooth the top with a spatula.
  4. Bake for 40 minutes or until the center is set and the edges are slightly golden. Remove from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  5. Once cooled, refrigerate for at least 2 hours or overnight.
  6. Serve chilled, topped with whipped cream and chocolate shavings.
