Preheat the oven to 325°F (160°C).

Crush the chocolate cookies and mix with melted butter. Press the mixture into the bottom of a springform pan to form the crust.

In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract.

Melt the dark chocolate and fold it into the cream cheese mixture. Pour the mixture over the crust in the springform pan.

Bake for 60 minutes or until the center is set.

Let the cheesecake cool in the oven with the door slightly open for 2 hours.

Remove from the oven and refrigerate for at least 4 hours, or overnight.

Serve chilled with whipped cream and chocolate shavings on top.
