Ingredients
  • 8 ounce Chocolate cookies
  • 1 cup Unsalted butter
  • 16 ounce Cream cheese
  • 1 cup Granulated sugar
  • 2 tablespoon Cocoa powder
  • 2 teaspoon Instant coffee granules
  • 1 cup Hot water
  • 1 teaspoon Vanilla extract
  • 3 unit Eggs
  • 1 cup Caramel sauce
  • 1 cup Whipped cream
  • 2 tablespoon Chocolate shavings
Instructions
  1. Preheat the oven to 325°F (163°C). Crush the chocolate cookies in a food processor and mix with melted butter. Press the mixture into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese, sugar, cocoa powder, and instant coffee until smooth. Dissolve coffee granules in hot water and add to the mixture. Stir in vanilla extract.
  3. Add eggs one at a time, beating well after each addition. Pour the batter into the prepared crust.
  4. Bake for 55-60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  5. Remove from the oven and let it cool completely. Refrigerate for at least 2 hours.
  6. Drizzle caramel sauce over the cheesecake and garnish with whipped cream and chocolate shavings.
  7. Slice and serve chilled.
