Ingredients
  • 1.5 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 2 tablespoon Sugar
  • 1 Egg
  • 1 cup Milk
  • 4 tablespoon Butter
  • 2 teaspoon Canned chipotle peppers in adobo sauce
  • 1/2 cup Corn kernels
  • 1/2 cup Cheddar cheese, shredded
  • 1/4 cup Green onions, chopped
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a 9-inch square baking dish.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, beat the egg. Stir in the milk, melted butter, chipotle peppers, corn kernels, and green onions.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the shredded cheddar cheese.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool for 10 minutes before serving.
