Ingredients
  • 3 cup Corn kernels
  • 2 cup Buttermilk
  • 1 cup Vegetable broth
  • 1 small Red onion
  • 1 small Garlic clove
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Fresh lime juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
Instructions
  1. In a blender, combine corn kernels, buttermilk, vegetable broth, red onion, garlic clove, cilantro, lime juice, salt, and black pepper. Blend until smooth.
  2. Transfer the mixture to a saucepan and simmer for 10 minutes.
  3. Remove from heat and let it cool for 30 minutes.
  4. Refrigerate the soup for at least 2 hours.
  5. Serve chilled, drizzled with olive oil and garnished with fresh cilantro.
