Sweet potatoes are not only delicious but also packed with nutrients. They are an excellent source of vitamin A, vitamin C, and fiber.

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the sweet potatoes. Pierce them with a fork a few times.
  3. Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender.
  4. While the sweet potatoes are baking, prepare the filling. In a large skillet, heat olive oil over medium heat.
  5. Add diced onion, minced garlic, and chopped red bell pepper. Saute until the vegetables are softened.
  6. Add chili powder, cumin, paprika, salt, and pepper to the skillet. Stir well to combine.
  7. Add black beans and corn kernels to the skillet. Cook for another 5 minutes.
  8. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  9. Slice each sweet potato lengthwise and gently mash the flesh with a fork.
  10. Fill each sweet potato with the chili filling.
  11. Return the stuffed sweet potatoes to the oven and bake for an additional 10 minutes.
  12. Garnish with fresh cilantro before serving.
