Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper.

In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Stir in the quick oats.

In another bowl, toss the strawberries with lemon juice, cornstarch, and granulated sugar.

Spread half of the oatmeal cookie mixture into the prepared baking pan. Top with the strawberry mixture.

Crumble the remaining oatmeal cookie mixture over the strawberries.

Sprinkle almond slices on top.

Bake for 25 minutes or until the edges are golden brown.

Allow to cool for 10 minutes before serving.
