  5. Place the mixture in the refrigerator for 1 hour to set.
  6. Once the mixture is firm, use a melon baller or spoon to scoop out small portions and shape them into balls.
  7. Roll each ball in unsweetened cocoa powder to coat.
  8. Press a pitted cherry into the center of each truffle.
  9. Place the truffles in an airtight container and refrigerate until ready to serve.
