Melt the dark chocolate in a heatproof bowl set over a saucepan of simmering water.

In a separate saucepan, heat the heavy cream until just simmering.

Pour the hot cream over the melted chocolate and stir until smooth and well combined.

Stir in the powdered sugar and vanilla extract until fully incorporated.

Place the mixture in the refrigerator for 1 hour to set.

Once the mixture is firm, use a melon baller or spoon to scoop out small portions and shape them into balls.

Roll each ball in unsweetened cocoa powder to coat.

Press a pitted cherry into the center of each truffle.

Place the truffles in an airtight container and refrigerate until ready to serve.
