  1. In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, tossing with a fork until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. In a small bowl, mix the cherries, cornstarch, and lemon juice.
  5. On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
  6. Spoon the cherry mixture onto the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as necessary.
  7. Brush the edges of the dough with beaten egg. Bake for 25-30 minutes, or until the crust is golden brown and the cherries are bubbly.
  8. Remove from the oven and let it cool for 10 minutes. Dust with powdered sugar if desired.
  9. Serve warm or at room temperature.
