In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Gradually add cold water, tossing with a fork until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a small bowl, mix the cherries, cornstarch, and lemon juice.

On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.

Spoon the cherry mixture onto the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as necessary.

Brush the edges of the dough with beaten egg. Bake for 25-30 minutes, or until the crust is golden brown and the cherries are bubbly.

Remove from the oven and let it cool for 10 minutes. Dust with powdered sugar if desired.
