  1. Preheat the oven to 375°F (190°C).
  2. Peel and thinly slice the potatoes.
  3. In a saucepan, melt the butter over medium heat. Add the garlic and cook for 1 minute.
  4. Stir in the flour and cook for 2 minutes, stirring constantly.
  5. Gradually whisk in the milk and bring to a simmer. Cook for 5 minutes, stirring occasionally, until thickened.
  6. Stir in the thyme, salt, and black pepper.
  7. Layer half of the sliced potatoes in a greased baking dish. Pour half of the cheese sauce over the potatoes. Repeat with the remaining potatoes and cheese sauce.
  8. Cover the dish with foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
  10. Let the gratin rest for 10 minutes before serving.
