Preheat the oven to 350°F (175°C).

Peel and slice the sweet potatoes into 1/4-inch thick rounds.

In a large pot, bring water to a boil and add the sweet potato slices. Cook for 10-15 minutes until tender.

Drain the sweet potatoes and transfer them to a large mixing bowl.

Add butter, brown sugar, cinnamon, nutmeg, salt, and vanilla extract to the mixing bowl. Mash the sweet potatoes until smooth and well combined.

In a separate bowl, whisk together eggs and milk. Add the egg mixture to the sweet potato mixture and stir until fully incorporated.

Transfer the sweet potato mixture to a greased casserole dish.

Sprinkle shredded cheddar cheese and pecans on top.

Bake in the preheated oven for 30 minutes or until the cheese is melted and bubbly.
