Ingredients
  • 2 tablespoon Butter
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon All-purpose flour
  • 4 cup Chicken or vegetable broth
  • 2 cup Milk
  • 2 cup Cheddar cheese
  • 1 cup Parmesan cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Parsley
  • for serving Croutons
Instructions
  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Sprinkle the flour over the onions and garlic, and stir well to coat. Cook for 1-2 minutes.
  3. Slowly pour in the chicken or vegetable broth while stirring constantly. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
  4. Stir in the milk, cheddar cheese, and parmesan cheese. Continue cooking over low heat until the cheese is melted and the soup is smooth.
  5. Season with salt, black pepper, and parsley. Cook for an additional 5 minutes.
  6. Serve the cheese soup hot, topped with croutons.
