Preheat the oven to 375°F (190°C). Grease a muffin tin.

In a large bowl, mix together the bran, flour, baking powder, and salt.

In a separate bowl, beat the eggs. Add the milk, vegetable oil, and honey. Mix well.

Pour the wet ingredients into the dry ingredients. Stir until just combined.

Fold in the grated cheddar cheese.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the muffins cool in the tin for 10 minutes.
